Mollie Katzen wanted to be an artist. Maybe a writer. Or was it a musician? Perhaps it was all of the above. What incidentally occurred on her journey to become the next Joan Baez was she earned herself the title one of the most revered and quiet revolutionists of modern-day cuisine — vegetarian cooking.

When winemaker Claire Allan chatted with her sister, a vegetarian, she realised there was some confusion about whether all wine was appropriate for vegans. Claire — who is also a vegetarian, and a winemaker who rebels against the industry’s wide use of thoughtless additives — felt it was time to make a change.
